Recipe: Easy Baked Balsamic Chicken

Tired of the same old chicken. Try using infused olive oils and balsamic vinegars.
This is one of my new favorite recipes. Adapted from the Mediterranean Dish.
Of course, I used Graze Oils Infused Garlic EVOO and Neapolitan Herb Balsamic Vinegar.
Delicious Easy Baked Balsamic Chicken
Ready in about 30 minutes
Ingredients
For the chicken
- 8 chicken thighs-
- Salt and Pepper
Balsamic Marinade
- ½ cup Garlic infused extra virgin olive oil
- ¼ cup Aged Traditional balsamic vinegar
- 1 tablespoon tomato paste
- 1 teaspoon honey
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon paprika
Instructions
- Make the marinade: Mix all ingredients In a large mixing bowl
- Pat the chicken dry and season generously with kosher salt and black pepper on both sides.
- Add the chicken to the mixing bowl and toss to coat well.
- Heat the oven to 425F degrees
- Let the chicken set for a few minutes while the oven heats. 10-15 minutes is great
- Place chicken in a baking dish and place in oven on the middle rack.
- Bake for 25-30 minutes or until chicken reaches internal temperature of 165F degrees.
