Today, we’re breaking down the hierarchy of olive oil so you can shop—and cook—with total confidence.

1. Extra Virgin Olive Oil (EVOO): The First Crush

Extra Virgin is the highest grade of olive oil you can buy. It is essentially fresh-squeezed fruit juice. To be certified as EVOO, the oil must be extracted through mechanical "cold pressing" only—no high heat or chemicals allowed.

  • Maximum Health Benefits: Because it’s unrefined, it’s packed with polyphenols. These are the powerful antioxidants that help protect your heart and reduce inflammation. Not all EVOO is created equal—the fresher the harvest, the higher the polyphenol count!
  • The Smoke Point Myth: Many people think you can’t cook with EVOO. That’s a myth! High-quality, fresh EVOO is incredibly stable and has a high smoke point between 380°F and 410°F. It’s perfect for roasting, sautéing, and even searing.
  • The Flavor: This is where the magic happens. From peppery and robust to buttery and light, the flavor profile of a "first crush" oil is unmatched.

2. Virgin Olive Oil: The Middle Ground

Virgin olive oil is also unrefined and made without chemicals, but it doesn't quite meet the strict "Extra" standards. It might have a slightly higher acidity or a less complex flavor. While it’s still a natural product, it lacks the high concentration of health-boosting polyphenols found in premium EVOO.

3. "Olive Oil" (Refined or Pure)

When a label simply says "Olive Oil" or "Pure Olive Oil," it’s a red flag that the oil has been refined. This process uses heat or chemicals to strip away impurities, but it also strips away the flavor, aroma, and almost all of the nutritional benefits. It’s a neutral oil, but you'll be missing out on those amazing antioxidants that make olive oil a superfood.
