Mediterranean Lemon ‑ Herb Chickpea Salad
Ingredients:
- 1 can chickpeas, drained & rinsed
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup parsley, chopped
- 2 tbsp Milanese Gremolata EVOO
- 1 tbsp Sicilian Lemon White Balsamic
- ½ tsp sea salt
- Black pepper to taste
- Optional: crumbled feta
Directions:
1. Combine chickpeas, tomatoes, cucumber, onion, and parsley.
2. Whisk EVOO, balsamic, salt, and pepper.
3. Toss salad with dressing.
4. Chill 10 minutes before serving.
